Serves 4-6
INGREDIENTS:
- 8-10 medium carrots, peeled, cut into sticks or coins
- 1 tbsp butter
- 2 tbsp maple syrup
- 1 tbsp fresh cilantro, chopped
Boil the carrots for 5-8 minutes, til just tender. Drain and return the pot to the stove over low heat.
Add the butter and syrup and stir to coat the carrots well. Simmer and stir for 2-3 minutes.
Stir in the chopped cilantro, remove from heat and serve.
