Night-Before Pancakes

INGREDIENTS:

  • 8 oz sour cream
  • 8 oz small curd cottage cheese
  • 1 cup flour
  • 4 egg yolks, beaten
  • ½ tsp salt
  • 1 tbsp sugar
  • 4 egg whites, stiffly beaten

Combine the sour cream and cottage cheese. Stir in the flour, eggs yolks, sugar and salt. Fold in the egg whites.

Allow the batter to stand several hours or overnight.

Easy to double or triple!
