Good and Good-for-You Pancakes

Makes 6-8

INGREDIENTS:

  • ¾ cup whole wheat flour
  • ½ cup wheat germ
  • 2 tbsp brown sugar
  • 2 tsp baking powder
  • ½ tsp salt
  • 1 beaten egg
  • 1¼ cups milk
  • 1 tbsp melted butter
  • ½ cup blueberries or chopped strawberries (optional)

Stir together flour, wheat germ, brown sugar, baking powder and salt. Combine egg, milk and melted butter. Add all at once to flour mixture, stirring just until blended but slightly lumpy (don't overmix!). Fold in fruit if using.

Pour about 1/4 cup at a time onto a hot, lightly greased skillet. Cook until golden brown on each side.
