Maple Syrup Recipes : Pour it On
PrintCorn Fritters
from John S. - Serves 4
INGREDIENTS:
- 2½ cups fresh corn
- 1 egg yolk, beaten well
- 1 egg white
- dash salt
- ¼ cup flour
Mix together the corn, well-beaten egg yolk, salt and flour.
Beat the egg white until stiff peaks form. Fold into the corn mixture.
Drop mixture onto hot buttered skillet (like pancakes) and cook until slightly browned on each side.
Serve with butter and warmed maple syrup.
