Five Spice Turkey (or chicken!)

Serves 4-6

INGREDIENTS:

  • 6-8 lb turkey
  • 1 tbsp five-spice powder
  • 1 tbsp salt
  • 1 tbsp plum sauce
  • 2 tbsp bean sauce
  • 2 tbsp hoisin sauce
  • 1 tbsp dry sherry
  • ¼ cup dark soy sauce
  • ¼ cup maple syrup

Rinse turkey thoroughly and pat dry. Rub cavity with the five-spice powder.

Mix together the plum sauce, bean sauce, hoisin sauce and sherry. Rub cavity with half of this mixture. Add the salt to the remaining mixture and rub on outside of the turkey. Refrigerate overnight.

Preheat oven to 425°. Mix together the soy sauce and maple syrup. Coat the turkey with this mixture.

Cover turkey loosely with foil and bake for 20 minutes. Reduce temperature to 350° and cook approximately 3½ - 4 hours (30-35 minutes per pound) or until thermometer registers 185°. During the last 30 minutes of cooking, uncover turkey so that the skin turns golden brown.
