Maple Syrup Recipes : Main Dishes

Serves 3-4
INGREDIENTS:
- 3 to 4 lb shoulder or leg of pork
- 4 tart apples, peeled, cored, chopped
- 1 bay leaf
- 4 potatoes, peeled, quartered
- 2 onions, roughly chopped
- 2 cloves
- 2 ½ cups beer
- 1 1/4 cups chicken stock
- 2 tbsp maple syrup
- salt and pepper, to taste
- 2 tbsp butter
- 2 tbsp chopped fresh cilantro
Place all ingredients except the butter and cilantro into a roasting pan, cover and cook for 4 hours at 325°. Remove the pork from the liquid, cover with foil, and allow to rest for 10 minutes.
Skim the excess fat from the cooking liquid. The apples and potatoes should have almost broken down, thickening the liquid. Carefully stir in the butter. Season with salt and pepper and add the chopped cilantro.
Break the pork into portions and serve in bowls or on plates with the sauce spooned over.
